Alyssa Birth (Corning, NY) chose Alfred State's Baking Production and Management program as part of a career change and a long-term goal of owning her own bakery.
A non-traditional student with a background in marketing, she was drawn to the program's accessibility, hands-on learning, and real-world experience.
"I've always had a passion for baking, and this program gives me the skills and experience to eventually go into business for myself."
From her first day on campus, Alyssa found herself working in a true production environment. Alongside her classmates they create baked goods for the campus community and public customers while gaining experience with commercial equipment, professional ingredients, and large-scale production.
"My favorite part of the program has been the hands-on experience. Here, you get a real feel for what it's like to work in a professional bakery."
Alyssa credits the faculty for helping her develop both technical skills and confidence in the kitchen. "The chefs are incredibly knowledgeable. They've taught me how to adapt, solve problems, and find solutions when things don't go exactly as planned."
Her previous degree in marketing has complemented her baking studies, particularly in courses focused on menu planning, branding, and business development. The combination of skills is helping her prepare for her future goal of opening a bakery or dessert shop in Corning.
A field trip to the Chautauqua Institute led directly to a pastry externship opportunity, providing another valuable step toward her career aspirations.
As a non-traditional student, Alyssa admits she was nervous about returning to the classroom but quickly found a welcoming environment and supportive community.

She plans to begin with a cottage bakery license before pursuing her dream of owning a bakery.
