Collegiate Restaurant’s next chapter as a learning lab

“Alfred State is excited with the progress we have made in assuming the operation of the Collegiate. We are thankful for all the help and guidance we have received from John Ninos and his family, and we can’t wait to continue their legacy with the re-opening of the restaurant later this summer.”

Dr. Steven Mauro

Plans are progressing as Alfred State will begin operating the Collegiate Restaurant, a landmark restaurant for over one hundred years in the village of Alfred. After multiple generations of service, the Ninos family has entrusted Alfred State to manage the restaurant as a learning lab for students.

Since Alfred State President Dr. Steven Mauro announced that the college would take over operation of the restaurant, plans have been put into high gear to continue the tradition of serving great food to a great community.

ASC to continue The Collegiate tradition 100 years strong

“We are very pleased to turn over management of the Collegiate to Alfred State. Their lease and operation of the restaurant will ensure that the restaurant stays on the village tax roll while simultaneously continuing the tradition of what the restaurant is known for, which is serving the community."

John Ninos

The restaurant industry is known for being fickle, but in Alfred, NY, the Collegiate Restaurant has just completed 100 years of operation. And its future is now secure with Alfred State College agreeing to manage the operation beginning in July.

In 1950, John E. Ninos took over the operation of the Collegiate until he sold it to his son John W. Ninos and his wife Chelly in 1996. They have continued the family business for generations of visitors to enjoy. The restaurant and its colorful outdoor patio are the focal point of Alfred’s downtown.
